Shrimp Scampi

Shrimp scampi is always a crowd pleaser. Make ahead of time and substitute zucchini noodles or gluten-free pasta for anyone low-carbing, paleo or gluten-free.
- 1 pound of large cleaned and peeled shrimp
- 1 pound of spaghetti
- 1/4 cup chopped parsley
- 4 cloves of grated or pressed garlic
- 1/4 cup of white white
- 1/4 cup of reserved pasta water
- 2 TBSP olive oil
- salt and pepper to taste
Boil a large pot of water. Add the olive oil to a hot skillet pan. Add garlic and cook for about 30 seconds. Add shrimp. Flip when they turn pink, about three minutes on each side. Add salt and pepper. When the pasta water boils, add a half a teaspoon of salt and cook the pasta according to package. Before draining, take out 1/4 cup of the pasta water. Add the pasta water and white wine to the shrimp and cook about 3 minutes until reduced by almost half. Combine with pasta, add parsley and more salt and pepper to taste. Ready to serve.
