Baked Plaice Fillet

This recipe sounds super fancy, and if like us, you have never heard of this fish, it's because its mostly sold in Britain and France. It's in the flounder family - we loved that it didn't have any bones, and was thin, so took no time to cook. We'd never made a fish prepared with mayonnaise before, but it was really good, and since it's baked and not fried, on the healthier side. Serve with veggies of choices. Here we served with sautéed cabbage, onions and bok choy and roasted cauliflower.
Ingredients
1.5 pounds flounder fillets, rinsed and patted dry
3 TBSP lemon juice, divided
1/3 cup grated Parmesan cheese
3 TBSP butter, melted
3 TBSP mayonnaise
2 chopped scallions
salt and pepper to taste
Preheat oven to 375. Lay a baking with parchment paper. Lay fish down and spoon over 1 TBSP of the lemon juice and season fish with salt and pepper. Mix remaining lemon juice, Parmesan cheese, melted butter, mayonnaise, and scallions in a bowl; spoon over the fillets. Bake flounder for about 10 minutes, then switch oven to broil; broil fillets until the tops are just browned, 3 to 5 minutes.
